Chilli Beef & Kale Stir Fry

Serve 2, prep time 10 minutes, cooking time 5-8 minutes

1 tbsp of vegetable oil
1 sliced onion
2 garlic cloves chopped
300g beef sirloin steak
3 tbsp chilli sauce
1 red pepper cut into strips
5cm piece of fresh ginger cut into strips
250g kale chopped
Salt & pepper
2 tbsp of water
1 red chilli
Strips of spring onion to serve
Steamed rice to serve

Heat the oil in a wok over a high heat, add the onion and garlic, and stir for a minute. Add the beef strips with chilli sauce. Brown the meat, then add the red pepper, ginger strips and kale. Season, add the chilli and a splash of water. Keep the ingredients moving in the wok until the kale softens but is still crisp. Remove from the heat, top with spring onion and serve with steamed rice.
