REVIEW: Japanese fusion pop-up, at Summersalt, Al Naseem, Dubai

As soon as I hear the word ‘fusion’ to describe a menu, it always makes me suspect it’s trying to do and be too many things. Here, however, the seemingly impossible fusion of Japanese and Argentinian food intrigued me.
Umi Shio, created by chef Cristian Goya. Summersalt at Al Naseem has launched its Japanese pop-up concept with a sharing menu of appetisers, crudo (raw fish), soups, tempura, seafood and meat. Using ingredients from these two very contrasting countries, such as lime, Mizo, truffle and yuzu (a small citrus fruit used in many Korean dishes), which come together perfectly.

Overall, I thought the unique fusion worked across all the dishes. And if I try, I can still taste that delicious seabass sashimi sauce.

I was attending of the unveiling of the new menu at this restaurant that serves lunch and dinner with a choice of indoor or outdoor seating.
I sat outside, overlooking the Burj Al Arab, along with a huge table of fellow guests, eagerly anticipating the new dishes. First served were the roasted langoustines with sweet and sour sauce, presented beautifully in tall glasses. My hot favourite was the crispy rice with spicy tuna tartare, a very unassuming dish to look at. However, the combination of the smooth, fresh fish and the crispy rice and the punch of spice was a scintillating surprise.

Seabass sashimi

Looking too good to eat, the seabass sashimi was a real show stopper. The combination of miso and the yuzu juice, slightly salty and sweet, was a perfect accompaniment to the fish. I would have been more than happy to part with some hard-earned cash, even for a tiny bottle of the seabass sauce. Two musts for meat-eaters are the Wagyu Beef Tataki served with Japanese mushrooms and dipping sauces, and the corn-fed chicken teriyaki, which was tender and flavoursome. Overall, I thought the unique fusion worked across all the dishes. And if I try, I can still taste that delicious seabass sashimi sauce.
