Coriander Pesto Rolls

Coriander Pesto Rolls

Makes 12, prep time 10 minutes, baking time 30-40 minutes

4 tbsp of walnuts
1 large bunch of coriander
4 tbsp of olive oil
2 tbsp of grated Parmesan
1 garlic clove chopped
Pinch of rock salt
Zest of a 1/2 lemon
1 sheet of puff pastry
Flour to dust
1 egg beaten
1 tsp of sesame seeds

Place all the ingredients in a processor and blitz until smooth. (You can store the pesto in an airtight container in the fridge).
Dust a flat surface with flour, roll out the sheet of pasty, evenly layer over the pesto. From each end of the pasty sheet roll towards the centre, with a sharp knife cut into 12 equal pieces.
Brush each roll with egg wash and sprinkle with sesame seeds, bake in the oven for 30-40 minutes until golden brown
