Pressure cooker: Tia Maria chocolate lava cakes
These are so easy to make, preparation is key, perfect for a dinner party and a real show-stopper!

Makes 4, prep time 10 minutes, cooking time 8 minutes

INGREDIENTS
FOR THE RAMEKINS
2 tbsp butter softened
4 tsp castor sugar

FOR THE BATTER
6 tbsp butter
1 cup of chocolate chips
½ cup of Tia Maria liqueur
3 eggs plus one yolk
1 cup icing sugar plus extra to serve
6 tbsp all-purpose flour
A pinch salt
4 ramekin dishes
Raspberries, fresh mint leaves, whipped cream or ice cream to serve

METHOD
FOR THE RAMEKINS
Grease the inside of each ramekin, add a teaspoonful of sugar to each dish. Cover with the palm of your hand, shake and tip out any remaining sugar. Set to one side.

THE LAVA MIX
In a medium-size microwaveable dish, place the butter, chocolate chips, and Tia Maria.
Microwave on a medium power for three minutes. Remove the dish and beat the mixture until smooth. In a large mixing bowl, beat the eggs, add the chocolate mixture and combine. Add the icing sugar, flour, salt and mix well.
Place the Nutricook steam rack into the pot and add a cup of cold water.
Fill each ramekin with the mixture, almost to the top, place two-at-time on the steam rack. Secure the lid and valve. Using the manual programme, set the timer to 8 minutes. When cooked, release the pressure.
Remove the lid, using gloves take out the ramekins, allow to stand for 5 minutes.
Place a small plate over the ramekin and invert so the lava cake slides out.
Repeat this process, top the lava cakes with raspberries, icing sugar and mint sprigs. Serve with some whipped cream or ice cream.
