Vimto Cup Cakes

Makes 12, prep time 10 minutes, cooking time 30-40 minutes

2 ½ cups all-purpose flour
1 cup of caster sugar
1 cup unsalted butter
½ cup milk
3 free-range eggs
2 ½ tsp baking powder
¼ tsp salt
1 tsp vanilla essence
1/3 cup of Vimto

4 cups icing sugar
200g cream cheese
1 tsp vanilla essence
1/2 tsp of pink food colouring powder
A handful of pomegranate seeds

Vimto Cup Cakes

Preheat the oven to 180 degrees and prepare a 12 cup bun tray with cases.
Sift the flour and baking powder into a bowl. In a food processor beat the butter and sugar until light and creamy.
Next, add eggs one at a time, along with the vanilla essence.
Add the flour to the mixture 2 tablespoons at a time, along with the milk.
Pour in the Vimto and continue to mix, when the mixture is smooth spoon into the cases.
Bake for 30-35 minutes, stick a knife into the cakes, if it comes out clean, they’re baked.
Remove the cupcakes from the oven set on a wite tray and allow to cool.
For the frosting. In a food processor, mix the icing sugar, salt, cream cheese, pink food colouring, on low speed until smooth. Then chill for 30 minutes.
Fill a piping bag with the frosting and decorate each cupcake, dust with icing sugar, pomegranate seeds and serve.
