6 fresh sausages (you can also use vegetarian sausages)
2 tbsp of olive oil
1 red onion chopped
1 tsp of freshly ground pepper
1 tsp of salt
1 tsp of garlic powder
2 tsp of cayenne pepper
1 red pepper diced
1 tsp of cumin seeds
1 cup of passata
2 tbsp of tomato purée
1 cup of chickpeas
1 cup of cannellini beans
3 tbsp of natural yoghurt
1/4 cup of fresh mint leaves chopped
Press the sauté programme on the Nutricook, pour in half the oil when hot add the sausages and brown for three minutes. Remove from the pot and set to one side.
To the pot add the remainder of the oil and sauté the onion until soft, season with salt and pepper.
Add the red pepper and stir for a minute. Next, add passata, tomato puree, cumin seeds, a little water, cover and simmer for two minutes.
Finally, add the cannellini beans, chickpeas and sausages. Cover the pot and close the valve, using the manual set the timer for 8 minutes on high pressure.
Meanwhile, prepare the yoghurt; combine the mint, yoghurt and a little seasoning in a dish and chill.
When the programme is complete manually release the pressure, stir the pot, season more if needed, serve with mint yoghurt.
