Tomato & Parsley Penne

Tomato Penne Rigate

Serves 4, prep time 10 minutes, cooking time10 minutes

1 tsp of olive oil
1 onion chopped
2 garlic cloves chopped
2 tsp of tomato purée
1 400g can of 800 Pizza peeled tomatoes
2 tbsp of chopped parsley
½ caster sugar
Salt & pepper
400g of penne rigate
Parmesan shavings to serve

Heat the oil in a large pan over a medium heat. Add the onion and sauté until soften then add the garlic; stir for a minute.
Add the peeled tomatoes and purée, bring to the boil, then reduce the heat to a simmer for 6-8 minutes.
Stir in the parsley and sugar, season to taste.
Meanwhile, cook the pasta as per pack instructions. Drain and add to the tomato sauce, stir and serve topped with parsley and parmesan.
