Serves 2, prep time 10 minutes, cooking time 5 minutes
2 tsp of oil
6 sausages (you can you veggie sausages too)
1 red onion
2 garlic cloves chopped
1 tsp of ground cumin
1 tsp of smoky paprika
2 tsp of dried thyme
1 can of cherry tomatoes
300ml of vegetable stock
8 small potatoes halved
1 cup of coriander stems (plus some chopped stems to serve)
Select the Nutricook to the sauté function, heat half the oil when hot brown the sausages. Remove the sausages and set to one side.
Next, add the remainder of the oil and sauté the red onion until soft, add the garlic, then stir in the dry spices, add a little vegetable stock to the pan so the spices don’t burn.
Return the sausages to the pot and stir for a minute, add the tomatoes, stock, potatoes and coriander. Switch the pot off.
Now, place the lid on and close the valve, set the manual function to five minutes on high pressure.
Finally, release the pressure, remove the lid, stir and serve topped with coriander.
