Serves 4, prep time 10 minutes, cooking time 5 minutes
2 tsp olive oil
1 red onion diced
Salt & pepper
2 sweetcorn cobs
(Remove the outer layers and rinse, cut each cob in half, stand upright on a chopping board, using a sharp knife remove the kernels)
1 sweet potato diced
2 carrots diced
3 garlic cloves chopped
3 peels and the juice of half a lime
1 tsp ground cumin
1 tsp ground coriander
½ tsp of smoky paprika
750ml vegetable stock
Coriander stems (keeping some aside to serve)
Select the sauté function, add the oil to the pot when hot sauté the onion and garlic until soft then season.
Add the lime peel, dry spice, lime juice and keep stirring.
Next, add the chopped ingredients, add a little stock and stir for a minute.
Add the remainder of the stock, stir then add the coriander.
Switch the pot off, add the lid, lock with the valve closed.
Select the manual setting, adjust to high pressure and set the time to five minutes.
After five minutes release the pressure manually, stir and serve topped with coriander.
