Serves 4, prep time 10 minutes, cooking time 7 minutes
2 tbsps of olive oil
1 red onion chopped
2 garlic cloves, chopped
1 can of chopped tomatoes
1 tsp of Marmite
2 tbsp of tomato purèe
Salt & pepper
300g of Quorn meatballs
500ml of vegetable stock
1 cup of chopped fresh basil leaves (keeping some aside to serve)
Grated parmesan to serve
Select the sautè function on the Nutricook pot. When hot, pour in the oil.
Add the onion, garlic and sautè until soft. Next, add the chopped tomatoes and stir in the Marmite.
Season, add the tomato purèe and vegetable stock, stir and simmer for one minute.
Next, add the vegetable stock, break the spaghetti in half and add to the pot.
Turn off the Nutricook, add the lid and close the seal. Select the pressure function and set for 7 minutes.
After cooking, release the pressure manually, use a fork to break up the spaghetti, spoon into deep bowls, serve topped with parmesan and fresh basil.
