NC: Lamb Korma

Serves 4, prep time 10 minutes, cooking time 20 minutes

INGREDIENTS
FOR THE LAMB
2 tbsp vegetable oil
1kg of lamb, cut into 4cm cubes
8 cardamom pods cracked
3 cinnamon sticks
A pinch of salt

1 tsp of pepper

FOR THE MARINADE
1 cup plain yoghurt
½ tsp ground cloves

2 tsp Kashmiri chilli powder
1 tbsp ground cumin
2 tbsp chopped ginger
6 cloves of garlic chopped
The juice of three limes
1 cup of beef stock

TO SERVE
Steamed basmati rice
Coriander leaves
Chilli strips
Mint yoghurt
