Vegetarian Sweetcorn Fritters

Vegetarian Sweetcorn Fritters

Makes 8, prep time 10 minutes, cooking time 8-10 minutes each

75g of all-purpose flour
1 free-range egg
1/2 tsp of bicarbonate of soda
1/2 tsp of garlic powder
Salt & pepper
1/2 pint of milk
5 chopped spring onions
150g can of sweetcorn, drained
4 tbsp of vegetable oil
1 cup of grated soft mozzarella 

Sift the flour into a mixing bowl, add the bicarbonate of soda, garlic powder, salt and pepper. Make a well in the flour, add the egg.
Gradually pour in the milk and mix into a smooth batter.
Add the chopped spring onion and sweetcorn, then leave to stand for ten minutes.
Next, in a mini frying pan, (you can use a regular frying pan, but a mini pan keeps the fritters to an even in size).
Heat a little oil over a medium heat, add two tablespoons of batter. Fry for five minutes on each side.
Add a layer of cheese, when the cheese starts to melt turn the fritters over.
Cook for a couple of minutes until browned. Repeat the process with the remaining batter. Finally, serve with some green chilli sauce and salad leaves.
