Oat Crunch Apple Crumble

Serves 6, prep time 25 minutes, cooking time 25-30

INGREDIENTS
FOR THE APPLE FILLING
600g cooking apples
1 tbsp allspice
4 tbsp of brown sugar


TO SERVE
300ml crème fraîche
1 tsp of vanilla essence

FOR THE TOPPING
60g unsalted butter
65g caster sugar
60g rolled oats
65g all-purpose flour
¼ tsp of salt
100g flaked almonds
60g desiccated coconut

METHOD
Preheat the oven to 180°C. 
Peel, core and dice the apples, add to a deep pan with ¼ cup of water over a medium heat.
Add the sugar, all-spice and stir, simmer for 10-15 mins until the apples start to break down, but not mushy.

For the topping: Heat a large pan over on a medium heat.
Heat the butter until melted, then add the sugar, stirring until it’s dissolved.
Add the oats and combine, then add the flour, almonds, and coconut and mix well. 
Turn off the heat and prepare the dish.
Pour the stewed apples into a deep ovenproof dish. Crumble over the topping, even out then bake for 30-40 mins until golden brown.

For the crème fraîche:
Whisk the crème fraîche and vanilla essence until smooth.
When the crumble topping is crispy and golden, remove from the oven, allow to cool slightly then serve, topped with crème fraîche.
