Serves 4, prep time 15 minutes, cooking time 1 hour 45 minutes
INGREDIENTS
1 large whole cauliflower, washed and trimmed
Rock salt
FOR THE CHEESE SAUCE
500ml milk
250g grated cheddar cheese
1½ tbsp flour
½ cup cold water
Seaweed flakes or freshly black pepper and smoky paprika to serve
METHOD
Preheat the oven to 190ºC. Wash and trim the cauliflower, place whole into a pot of salted water, bring to the boil and simmer for 10 minutes.
To make the cheese sauce; heat the milk in a pan with the grated cheese, keeping some to top.
Stir until the cheese has melted, in a glass, mix the flour with cold water then add to the milk. Stirring until the sauce thickens.
Drain the cauliflower then place it into a deep ovenproof dish, with a fitted lid.
Pour over the cheese sauce, top with the remainder of the cheese, sprinkle with seaweed flakes and dust with paprika.
Bake in the oven for 35-45 minutes until golden in colour, use a knife to check the texture of the cauliflower, (it should be slightly firm when cooked).
Remove from the oven, allow to cool slightly and serve.
