
Order the fresh seafood ingredients from Hello Fish
Serves 2, prep time 10 minutes, cooking time 15 minutes
INGREDIENTS
50g unsalted butter
2 garlic cloves, chopped
3cm piece ginger, chopped
1 small fennel bulb, roughly chopped
2 celery sticks roughly cut (keeping the leaves to serve)
¼ cup mirin (sweet Japanese rice wine)
¼ cup of soy sauce
1 can chopped tomatoes
1 tbsp of sriracha sauce
1kg of Hello Fish fresh mussels, scrubbed and bearded
To serve: freshly toasted bread

METHOD
Melt the butter in a large shallow pan over a medium heat.
Add the garlic, ginger, celery and fennel, cook until softened.
Next, add the mirin, soy sauce and bring to a simmer for 5 minutes.
Add the tomatoes and sriracha sauce, stir and bring the pot back up to a simmer.
Stir the mussels into sauce, cover the pot and cook for 6–8 minutes, stirring once halfway through, until mussels fully opened. (Discard any unopened shells).
Remove the pan from heat.
Ladle the mussels into shallow bowls, top with celery leaves and serve with warm toasted bread.
