Serves 4, prep time 10 minutes, cooking time 40-50 minutes (plus an hour to marinade)
Za’atar is a blend of dried thyme, oregano, marjoram, sumac, toasted sesame seeds, and salt.
1 large chicken cut into pieces
2 tbsp of Za’taar Spice Mix
2 garlic cloves chopped
½ tbsp of rock salt
½ cup of olive oil
Zest and juice of a lemon
Lemon slices and chopped coriander to serve
Preheat the oven to 180C degrees, Wash and trim the chicken and divide into equal parts. Place the Za’taar spice mix in a pestle and motor with the garlic and rock salt and crush.
Add the lemon juice, zest, then and add the oil and mix into a paste.
Place the chicken in an ovenproof dish.
Coat with the marinade (Best to do this as far in advance as possible).
Cook in the oven for 40-50 minutes basting halfway.
When cooked serve topped with lemon slices and chopped coriander. Za’taar Roasted Chicken
