Coconut Milk Rice Pudding

Serves 4, prep time 10 minutes, cooking time 1 hour

½ cup of long grain rice
1 tsp of vanilla essence
300ml of coconut milk
200ml milk
½ cup of sugar
1 cinnamon stick

2 tbsp of strawberry jam
Flaked almonds
Brown cane sugar

Pour the rice into a sieve and rinse in cold water. Place the rice in a saucepan and add the remainder of the ingredients. Put on a high heat and bring to the boil. Stir, then turn down the heat and simmer for an hour. Stir the rice every ten minutes. Once cooked turn off the heat remove the cinnamon stick and cool for ten minutes. Finally, serve in four dessert dishes, top with jam, almonds flakes and sprinkle over some brown cane sugar.
