Serves 4, prep time 15 minutes
1 medium romaine lettuce, sliced
3 large tomatoes, cored and cubed
2 ripe avocados Juice of a lemon
1 spiralized (or grated) carrot
3 spring onions chopped
2 tbsp of olive oil
1 tbsp of chopped fresh dill
Salt & pepper
Wash and dry the lettuce then slice into strips.
Core, cube the tomatoes and spiralize (or grate) the carrot.
Lay the lettuce in a large serving bowl, add half the diced tomato.
Next, add the carrot and half the spring onions.
Halve the avocados lengthways, remove the stones, using a small melon baller, scoop out the avocado.
Place in a bowl and mix with lemon juice.
Finally, add to the serving dish the remainder of the ingredients, top with avocado, fresh dill, drizzle with olive oil, season, and serve.
