Chicken Liver Paté

P1080099Serves 8-10, prep time 15 minutes, cooking time 10 minutes, plus chilling time

400g of chicken livers
3 tbsp of butter
1 shallot chopped
2 garlic cloves chopped
4 tbsp of chopped coriander
2 tsp rock salt
4 bagels & gherkins to serve


Wash and trim the livers and cut into small chunks. In a frying pan melt a tablespoon of butter, then add the livers. Cook for four minutes until they are opaque in colour, they will spit so cover the pan. Remove the livers from the pan, set to one side. Next, in the same pan fry the shallots and garlic for two minutes. Place the cooked livers in a food processor with the remaining butter, chopped coriander, shallots, salt and blitz until smooth. Finally, pour the mixture into two ramekins and chill in the fridge for a few hours until set. When set serve on toasted bagels with pickled gherkins.
