Chicken Kebabs on Flatbread

P1080064Serves 2, prep time 10 minutes, cooking time 15-20 minutes

2 chicken breasts cubed
1/2 a red onion cubed
8 mushrooms
1 yellow pepper cubed
1 green pepper cubed
8 cherry tomatoes

2 tsp of all-purpose seasoning
1 tsp of cayenne pepper

2 flatbreads
Salt & pepper
1 tbsp of oil for frying

4 tbsp of hummus
4 wooden skewers
1/2 red onion sliced to serve
A handful of chopped fresh mint to serve

Soak the wooden skewers in water for 15 minutes. Starting with the tomato, start to build the kebabs. Alternate the ingredients on the skewers. Place on a plate and drizzle with oil, sprinkle with the cayenne pepper, all-purpose seasoning and season. Heat some oil on a medium heat in a griddle pan. Place the kebabs in the pan and cook on each side until the chicken is cooked. Once cooked remove from the pan, add the flatbread and heat on each side. Place the bread on a plate, add the kebabs, top with chopped mint, sliced onion and serve with hummus.
