Garlic & Lemon Chicken With Grilled Sweetcorn

P1100284Serves 2, prep time 10 minutes, cooking time 15-20 minutes

3 garlic cloves chopped
Juice of a lemon
Zest of a lemon
1 tbsp of olive oil
1 tbsp of chicken seasoning
6-8 chicken thighs trimmed and skinned
2 corn cobs cut halved 
3 tsp of butter
1 tsp of sea salt

Slice red onion
Chopped coriander
Lemon wedges

Make three deep cuts into each chicken thighs and place in a bowl. Add the chopped garlic, chicken seasoning, lemon zest, juice and season. Leave to marinate for an hour. Heat the oil in a griddle pan on a medium heat and add the chicken. Cook for 8-10 minutes on each side until the chickens cooked. Remove the chicken from the pan and keep to one side. Keep the pan on a medium heat and add the corn cobs, brush with butter and salt. Keep turning the cobs until the kernels are golden. Remove the corn from the pan and place in a dish. Pour out any excess oil from the pan and return to high heat. Put the chicken back into the pan and grill for two minutes on each side. When the chicken is browned remove from the pan and place on a chopping board, add the corn cobs, top with sliced red onion, coriander and serve with lemon wedges.
