This recipe was part of my Covid_19, Quarantine menu. I had bacon lardons in the freezer, pasta in the cupboard, I also managed to scrape two tablespoons of cream cheese from a tub that was in the back of the fridge. A little paprika and some seasoning we are good to go, zero shopping required.

Serves 2, prep time 10 minutes, cooking time 10 minutes
INGREDIENTS
250g spaghetti
1 tbsp of olive oil
1 small onion, finely chopped
200g smoked bacon lardons
½ tsp of smoky paprika
2 tbsp of cream cheese
Salt & pepper

METHOD
Cook the spaghetti in salted water as per pack instructions.
Heat the olive oil in a pan, add the chopped onion, sauté until soft.
Next, add the bacon lardons, stirring until the fat begins to release.
Sprinkle with paprika, season to taste then reduce the heat.
When the pasta is cooked, drain, retaining the water.
To the pan, add the cream cheese, stir until it begins to melt, then gradually add some pasta water, until the sauce is creamy.
Finally, add the cooked pasta, mix thoroughly, then serve.
