Whitebait with Garlic Mayo, Coriander & Lime

Serves 6, prep time 10 minutes, cooking time 15 minutes

INGREDIENTS
450g of frozen whitebait
400ml of vegetable oil for frying
1 cup of plain flour
1 tsp of cayenne pepper
½ tsp of garlic powder

TO SERVE
Salt & pepper
A handful of coriander, chopped
Lime wedges

Rock salt

FOR THE GARLIC MAYONNAISE
3 tbsp of mayonnaise
½ tsp of garlic powder

METHOD
Rinse the white bait in cold water and dry on a paper towel.
Add the cup of flour to a large bowl with cayenne pepper, garlic powder, season and mix.
Coat the fish with the flour mix. Heat the oil in a deep pan or wok.
When the oil is hot add a handful of the fish, cook for 2-3 minutes.
Once the fish crisps up remove from the oil with a mesh spoon and place on some paper towels to drain the excess oil. Repeat the process until all the fish is fried.

For the garlic mayonnaise; In a bowl mix the garlic powder with the mayonnaise.
Plate the fish, sprinkle with chopped coriander, rock salt and a squeeze of lime.
Serve with garlic mayonnaise.
