Whether you love or hate it, Marmite is a fantastic instant marinade. The mustard adds a bit of heat and really enhances the flavour of the pork. When served on a mix of green vegetables, this makes for a simple, nutritious meal that’s also super budget-friendly at just over £10 for two.

Serves 2, prep time 10 minutes cooking 12-15 minutes
INGREDIENTS
250g pork belly slices
1-2 tbsp of Marmite
1 tbsp of English mustard
Salt & pepper
1 tbsp of olive oil
Few sprigs of rosemary
2 x 250g green vegetable medley
METHOD
Place the pork slices on a flat dish.
Pat dry with kitchen towel and brush with Marmite, on all sides.
Next, brush with mustard, adjust to your taste and season.
Heat the oil in pan over a medium heat.
Add the rosemary to flavour the oil, then add the pork slices, cook each on both sides for 3-4 minutes.
Turn off the heat and let the pork rest.
Cook the vegetables as per pack instructions.
Divide the vegetables into two deep bowls, stacked the pork on top, drizzle the juices from the pan, serve and enjoy.
