As a freelance creative director, I often work from an office, and lately I’ve been working in central London, in the middle of Leicester Square. Affordable lunch options in this area are scarce. For instance, a simple takeout chicken Caesar salad can set you back around £5 from a supermarket, and they’re rarely satisfying. Scrolling through the delivery apps, I found the priciest at a whopping £15.95, plus a delivery charge.
Not prepared to part with that amount of cash, I’ve prepared two chicken Caesar salads for £4.27 each, using store bought ingredients, try my ‘how to’ chicken Caesar salad below. (I’ve swapped croutons with dried onions as I’m not a fan).

Serves 2, prep time 10 minutes
INGREDIENTS
2 romaine lettuce hearts
160g flame grilled chicken
100g Parmigiano Reggiano, finely grated
260ml caesar dressing
Salt and pepper
To serve, crispy onions
HOW TO:
Trim the stems off the lettuce, cut lengthwise from top to bottom, then in half again.
Place on flat serving plates.
Drizzle with a small amount of dressing.
Divide the chicken between the two plates.
Add more dressing, season the top with Parmigiano, onions, serve and enjoy.
